Slice the halloumi (250 g) into 8 pieces. Pan-fry in a non-stick frying pan over a medium heat for 1-2 minutes on each side, until golden. Spoon over the sweet chilli sauce (2 tbsp) and cook for a further minute then set aside.

Fry the eggs (4) in a splash of oil for 3-4 minutes or until cooked to your liking.

Meanwhile, slice the avocado (1) and squeeze over the juice of the lime (1). Toast the buns (4) until lightly golden.

To assemble, fill the buns with the sweet chilli halloumi, egg and avocado, adding an extra drizzle of chilli sauce (to taste), if you like.
