Heat the grill to high. Line a large baking tray with tinfoil and spread the bacon (240 g) onto the tray. Grill for 3 minutes on high heat, flipping half-way. Cook for an extra 2 minutes for crispy bacon.

Heat a large nonstick frying pan on medium-high heat with 1 tbsp olive oil. Once the oil is hot, gently crack in the eggs (4) and cook until the whites are set, but the yolk is runny. Season with a pinch of salt and pepper.

Meanwhile, halve the hot cross buns (250 g) and pop them under the grill for 2 minutes, until golden brown.

Spread some of the smoky ketchup (to taste) onto the base of the hot cross bun and top with the bacon, fried egg and diced avocado (2). Serve with more ketchup, if you wish.
