step 1
Preheat the oven to 200°C/180°C Fan/gas mark 6. Add the plums (6) to a medium ovenproof dish, and drizzle with honey (1 tbsp) and a splash of water. Pop in the oven and cook for 15 minutes, until just soft.

Make the pancake shaker mix (1 bottle) according to pack instructions. Whisk in the cocoa powder (1 tbsp) and fold through the chocolate sprinkles (2 tbsp) Shake well to combine.

Heat 2 tsp of neutral oil in a large non-stick frying pan over a medium heat. Add 3-4 tbsp of pancake batter to the centre of the pan and cook undisturbed for 2 minutes, or until plenty of tiny bubbles appear on the surface. Using a spatula, gently flip the pancake and cook for a further 2 minutes. Transfer to a plate and cover with a clean tea towel to keep warm. Repeat with the remaining batter.

Add the hazelnut crème (100 g) to a microwaveable bowl, microwave on high in 30 second intervals, and mix until it is runny enough to drizzle.

Top the pancakes with the yogurt (150 g), followed by the roasted plums, hazelnut creme and the hazelnuts (as needed).
