Finely shred the cabbage (1/4) and cut the carrots (1) and radishes (150 g) into matchsticks. Place in a large bowl with ½ tsp salt and the nuoc cham (2 tbsp). Stir together and set aside.

Preheat the oven to 220°C/200°C fan/gas mark 7. Cook the prawns (1 pack) for 11 minutes, according to the pack instructions.

To assemble, halve the mini submarine rolls (8) and spread one side with mayonnaise (1 tbsp) and the other with sriracha (1 tbsp). Fill each with a small handful of the pickled veg and 2 prawns. Garnish with a little fresh coriander (1 bunch).
