Preheat the oven to 200°C/ 180°C Fan/gas mark 6.

Lay one of the filo sheets (2 sheets) on a work surface and brush with olive oil, then lay the second sheet on top and brush with a little more oil.

Place one of the pieces of feta (1 block) on top of the pastry and spread with ½ tsp harissa paste (2 tsp). Place the remaining feta on top to create a rectangle with the harissa in the middle. Spread the top of the feta with another ½ tsp harissa.

Fold the bottom of the filo on top, tuck in the sides and roll it tightly as if you’re wrapping a present.

Brush the feta with a little more oil, then sprinkle the top with the sesame seeds (1 tbsp). Bake for 15 minutes, remove from the oven and drizzle over the honey (2 tsp), then return to the oven for a further 5-10 minutes, until the pastry is golden and cooked through.

Meanwhile, heat the lentils (1 pack) according to the pack instructions. Finely chop the spinach (1 handful), wash and peel the carrots (200 g) into thin strips using a speed peeler, and finely chop the dates (3). Combine the remaining harissa with the lemon oil (1 tbsp) and toss everything together in a large bowl to combine. Season to taste with salt and pepper.

Serve the baked feta with the lentil salad, garnished with some fresh mint (as needed), if you like.
