Preheat the oven to 200°C/ 180°C Fan/gas mark 6.

Start by making the salsa. Mix half the red onion (1/4), tomatoes (4), avocado (1), lime juice (1) and half the coriander (1/2 handful) in a bowl. Season with salt and pepper to taste and dress with a drizzle of olive oil.

Heat a large knob of butter in a frying pan over a medium heat and then whisk in the eggs (12) and chipotle paste (2 tsp). Season with salt and pepper and cook until the eggs have scrambled but not set. Remove from the heat.

Melt a knob of butter in the microwave or a separate saucepan.

Add the scrambled egg to half of each tortilla wrap (4) and top with grated cheddar (150 g) and the remaining onions (1/4) and coriander (1/2 handful). Fold and brush the top with melted butter. Place on a lined baking tray and cook for 10-15 minutes, until the wraps are golden, and the cheese has melted.

Cut in half and serve the quesadilla with the salsa and your favourite hot sauce, if you like.
