Preheat the oven to 200°C fan. Pull the stems out of the mushrooms (4) and discard.

Add the grains (1 pack) to a large bowl with the pesto (2 tbsp) and chopped parsley (1 handful) and mix well to combine. Season with salt and pepper.

Top the mushrooms with the rice mixture, packing it in gently. Place it on a baking tray and pop it in the oven for 20 minutes.

Turn the oven to a high grill. Top the mushrooms with the grated cheese (50 g), then place under the grill for 3-4 minutes, until golden.

Serve with a rocket salad.
