Melt the butter (3 tbsp) in a frying pan over a medium-high heat, whisk in the sugar (3 tbsp) until dissolved, then remove from the heat.

Dunk the crumpets (1 pack), hole-side down, into the buttery mixture, then place on a tin foil-lined baking tray hole-side up.

Turn on the grill to high. Grill the crumpets for 2-3 minutes, until golden brown.

Meanwhile, mix the crème fraîche (6 tbsp) and honey (2 tbsp) in a small bowl (add more honey, if you like it sweeter).

To serve, dollop on the honeyed crème fraîche, spoon over the cherries (as needed) and scatter with hot chocolate flakes (as needed).
