Make your brine by using a ratio of 5% salt (as needed) to water and mix well to dissolve. The water needs to cover the turkey, so make sure you have a container/pot big enough. Add the bay leaves (4), juniper berries (1 tsp) and rosemary (1 sprig). Add the turkey (1) and leave to brine for 8 hours in the fridge.

When ready to cook, add your turkey to a roasting tray on top of a trivet of onions (1), carrots (2), celery (3) and garlic (1 bulb). Rub the turkey with olive oil or butter, and roast according to pack instructions.

Allow to rest covered with foil for at least 45 minutes before carving.

Remove the legs first and then carve the breast meat into slices (as thick, or thin as you like).
