Add the prawns (1 pack) to a bowl and coat in the Marie Rose sauce (3 tbsp). Season with pepper.

In a separate bowl, dress the lettuce (1) with the lemon juice (1/2), white wine vinegar (1/2 tbsp) and a drizzle of olive oil. Season to taste.

Toast the sourdough (4 slices) and spread with butter. Top with the lettuce, followed by the sliced avocado (1) and prawns.

Sprinkle over the smoked paprika (1/2 tsp) and chopped chives (1 handful). Finish with a drizzle of olive oil and the crushed prawn crackers (6).
