Heat a splash of oil in a large frying pan or wok over a medium heat. Add the eggs (3) and a pinch of salt, swirling around to make an omelette. Flip, then roll into an omelette shape and set aside on a chopping board. Cut into 2cm pieces.

Heat another splash of oil in the same pan and add the spring onions (1 bunch), reserving some to garnish. Stir-fry for 2 minutes then stir in the nasi goreng paste (2 tbsp), pineapple (1 pack), and rice (1 pack). Stir-fry for 3-5 minutes until everything is piping hot. Stir the omelette pieces through at the end.

Serve with lime wedges (1) for squeezing over, the reserved spring onions, and a drizzle of hot sauce (to taste), if you like.
