Preheat the oven to 180°C fan. Carefully slice off the tops of the apples (4), about 1-2 cm then dig down with a teaspoon and remove the core, leaving the edges of the apple intact.

Toss the granola (100 g) with the lemon zest (1) and half the brown sugar (2 tbsp). Stuff into the apples then transfer to a lined baking tray. Sprinkle over the remaining sugar and bake for 25-30 mins until soft and golden.

Meanwhile, stir the creme fraiche (6 tbsp), lemon juice and maple syrup (1 tbsp) together in a bowl. Serve drizzled alongside the baked apples.
