Preheat the oven to 180°C/160°C Fan/ gas mark 4. Split open the croissants (2 packs), spread with soft cheese (125 g) then stuff with the smoked salmon (200 g) before sandwiching shut. Lightly butter (as needed) an ovenproof dish and place the croissants in it.

Roughly chop most of the dill (1/2 pack) and whisk with the eggs (4) and plenty of seasoning. Combine with the milk (200 ml), cream (300 ml), half the lemon zest (1), half the lemon juice and half the grated cheese (25 g) and pour over the croissants. Sprinkle with the remaining grated cheese and bake in the oven for 40-45 minutes until golden and bubbling.

Dress the rocket (1 pack) with the remaining lemon juice and zest and serve alongside the croissants before sprinkling with the remaining dill.
