Heat a splash of oil in a large frying pan or wok over a medium-high heat. Tear the larger mushrooms (1 pack) in half then add to the pan with the spring onion (1 bunch) and ginger (1 tsp). Cook for 5-7 minutes, tossing and stirring now and again, until the mushrooms are a deep golden brown.

Add the laksa broth (1 pouch) to the veg and bring to a boil and cook for 5 minutes until it thickens.

At the same time, bring water to the boil in a medium saucepan. Add the noodles (2 nests) and cook for 5 minutes. Add the pak choi (1 pack) for the last minute of cooking.

Drain the noodles and pak choi and add to the sauce, tossing until glossy. Spoon into bowls and serve with the sesame seeds (1 tsp).
