Add a little olive oil to a medium frying pan, and cook the onion (1) for 10 minutes over a low to medium heat, until very soft. While that’s happening, fill and boil a kettle.

Add the garlic (2 cloves) to the pan and cook for another two minutes.

Add the pearl barley (200 g) to the pan and stir for a couple of minutes, letting the pearl barley toast slightly. Then add 750ml of hot water from the kettle to the pan and bring it to the boil.

Turn down to a simmer and leave to cook for about 30 minutes, stirring every eight or so minutes and adding a splash of water if the pan runs dry.

When the pearl barley is soft and plump and the water is all but gone, stir through the lemon zest (1/2) and lemon juice (1), frozen peas (70 g) and Parmesan (45 g), followed by the chopped parsley (1 tbsp). You can puree some or all of it now, according to where you are in your child’s weaning journey.
