Cook up this delicious crumble, as seen on Tom Kerridge’s TV show and in the accompanying book, Tom Kerridge Cooks Britain. “This is the ultimate crumble,” says Tom. "In addition to apples, I threw in pears and blackberries. Few things beat the fruity flavour of this warm pud with the crunchy texture of the oat and hazelnut topping.”

step 1
Preheat the oven to 200°C/180°C fan/ Gas 6. Have ready a 32 x 20cm rectangle baking dish and line an oven tray with baking paper.
step 2
Put the butter (120 g) and sugar (100 g) into a sauté pan and place over a medium-high heat for 2-3 minutes or until the butter is melted and the sugar is dissolved. Add the juice (250 ml), bring to a simmer and cook for another 2-3 minutes.
step 3
Add the diced Bramley apples (2) to the pan and cook for 5 minutes or until softened. Add the diced Granny Smith apple (1) and the diced pears (4), stir well and cook for another 5 minutes. Remove from the heat and stir in the mixed spice (1/2 tsp), cinnamon (1 tsp) and blackberries (300 g). Transfer the spiced fruit mixture to the baking dish.
step 4
To make the crumble topping, put the flour (250 g) and butter (180 g) into a bowl and rub together with your fingertips until the mixture resembles coarse crumbs. Stir through the sugar (60 g), oats (80 g) and hazelnuts (100 g). Sprinkle half of the crumble over the fruit mixture.
step 5
Scatter the remaining crumble onto the prepared oven tray. Place both the baking dish and tray in the oven and bake for 30 minutes or until the crumble topping on the fruit turns golden brown. Remove the dish and tray from the oven.
step 6
Spoon some of the crunchy crumble from the tray over the fruit crumble. Serve with vanilla ice cream (as needed) or custard, with the rest of the crumble in a bowl on the side so everyone can help themselves.
