Preheat the oven to 180C. Cook the ciabatta rolls (4) according to pack instructions and set aside.

Combine the mayonnaise (100 g), shallot (1/2), capers (2 tbsp), gherkins (4 tbsp), lemon (1/4) and parsley (1 handful) in a small bowl and season to taste.

Add the panko breadcrumbs (100 g) to a bowl and season with salt and pepper.

Cut the cod fillet (500 g) into fingers, then coat in the flour (100 g), followed by the eggs (3) and panko breadcrumbs. Shallow fry in batches or cook in an air fryer until golden brown and cooked through. Keep warm in the oven while you prepare the shoestring fries.

Julienne the potato (3) with a mandolin or a potato peeler with little teeth. Shallow-fry in batches until golden and place on kitchen paper to drain off the excess fat. Toss with salt and pepper.

Cut the rolls in half and add the tartare sauce, lettuce (1 handful) and fish fingers. Top with the shoe-string fries, followed by the top off the rolls.
