step 1
To make the charred pineapple salsa, heat a splash of oil in a large frying pan over a medium-high heat and add the pineapple chunks (200 g). Cook, undisturbed, for 4 minutes until charred, then toss and cook again for a further 2-3 minutes, charring on all sides. Remove from the pan and finely dice.

Heat a splash of oil in the same pan over a medium heat and add the diced onion (1/2) with a pinch of salt. Sauté for 5 minutes until softened, then stir in the fajita seasoning (2 tsp) and cook for a further minute. Add the charred pineapple back to the pan along with 2 tbsp water. Simmer for 5 minutes until reduced slightly.

Heat the wraps (1 pack) in a frying pan according to the pack instructions, keeping warm in a clean tea towel.

Heat a splash of oil in a frying pan over a medium-high heat and fry the prawns (1 pack) for 3-4 minutes, until piping hot. Slice the avocado (1).

Add a spoonful of the pineapple salsa to each taco, before piling on the prawns and the avocado to serve.
