Slow-cooked courgette bruschetta

This antipasto dish makes an elegant starter piled on crunchy toasts, but it would be equally good stirred through pasta or used as a topping for a puff pastry tart. Try adding crispy Parma ham or parmesan shavings to make it even more indulgent.
