Put the onion (1), chickpeas (1 tin), roasted peppers (75 g), sundried tomato paste (1 tsp) and parsley (1 handful) into a food processor and season well. Pulse until coarsely chopped and well combined.

Transfer to a bowl and mix with the mince (400 g). Wet your hands and gently squeeze and shape the mixture into 8 burgers, each about 8cm in diameter. Put on a tray or plate and chill for 10 minutes to firm up.

Place a large frying pan over a medium-low heat. Brush both sides of each burger with oil and fry for about 4-6 minutes per side until cooked through – don’t move the burgers until they’re ready to turn. If cooking all 8, you will need to do this in batches.

Serve the burgers in toasted buns (8) with salad (to taste) and M&S special burger sauce (as needed) or any sauces of your choice.
