For the dressing

M&S rose harissa paste
2 tbsp
olive oil
1 1/2 tbsp
M&S apple cider vinegar
1 tsp
M&S pure honey
to taste
lemon juice

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Place the mushroom meatballs (1/2 pack) evenly on parchment lined baking tray and place in the oven for 30 minutes.

After 5 minutes, arrange the sweet potatoes (2) on a baking tray in one layer and roast for 20-25 minutes, until soft.

Cook the grains (1 pack) according to the pack instructions before stirring through the roasted peppers (75 g).

Whisk together the harissa paste (2 tsp), olive oil (2 tbsp), apple cider vinegar (1 1/2 tbsp), honey (1 tsp) and lemon juice (to taste) and set aside.

Slice the avocado (1), season with salt and squeeze over the lime juice (1/2).

To assemble, spoon the grains into shallow bowls, then top with the sweet potatoes and mushroom balls. Add the avocado, radish (1 handful) and pea shoots (1 handful). Spoon over the dressing. Scatter over the toasted seeds (1 handful), pomegranate seeds (1 handful) and herbs (to taste), if using.
