Preheat the oven to 180°C/160°C fan/gas mark 4. Parboil the sweet potato chunks (2) for 10 minutes, until slightly softened. Add to a baking dish with the garlic (4 cloves), drizzle with olive oil and sprinkle with most of the cajun seasoning (6 tsp). Roast for 25 minutes.

Meanwhile, heat a drizzle of olive oil in a saucepan over a medium heat and fry the onion (1) with a little more cajun seasoning until soft. Add the tomatoes (1 tin) and cook for 15 minutes.

Crumble the chorizo puppies (4) into a frying pan and cook until crispy.

Remove the sweet potatoes from the oven and squeeze the garlic cloves from their skins. Stir the garlic into the mayo (4 tbsp), along with the lemon juice (1/2). Serve the potatoes topped with the tomato sauce, vegan chorizo, mayo and chopped parsley (1 handful).
