Toast the bread (8 slices) until golden and crisp. Meanwhile, use a stand mixer or wire whisk to whip the ricotta (1 pot) for 2 minutes until light and fluffy.

Spread the ricotta onto each slice of bread and arrange the orange slices (2), clementine slices (2) and grapefruit slices (3) on top.
