Dissolve the sugar (75 g) in 75ml water over a low heat to make a syrup. Leave to cool.

Add the gin (60 ml), lemon juice (25 ml) and 15ml of the sugar syrup to a cocktail shaker with ice and shake. (Leftover syrup can be stored in the fridge.)

Fill a tall tumbler with ice. Strain in the cocktail, then add the soda water (50 ml).

Garnish with a lemon twist (to taste) to serve.
