Cut the aubergine (1) into 2cm rounds.

In a bowl, mix together the panko breadcrumbs (75 g) with grated parmesan (1 tbsp), Italian seasoning (1/2 tbsp) and salt and pepper. Set up two other bowls, one with the plain flour (20 g) and one with the beaten egg (1).

Preheat your air fryer to 200C.

Dip the aubergine rounds into the flour, then the beaten egg, then the panko breadcrumbs mix.

Add the rounds in a single layer to your air fryer. Air fry for 8-10 minutes.

Flip the rounds over, top each with a blob of the Calabrian chilli and fennel ragu (75 g), a small piece of the mozzarella (1/2) and a little pinch of parmesan (1 tbsp) and air fry for another 8 or so minutes.

If cooking in an oven, preheat to 180C fan, cook the aubergine rounds for 8-10 minutes, flip them over and top with the ragu and cheese. Pop back in the oven for 10 minutes.
