In a small saucepan, combine half of the blackberries (1 punnet) with 1 tbsp icing sugar (1 tbsp) and a squeeze of lemon juice (1). Simmer over a medium heat until the fruits break down and the mixture thickens. Allow to cool.

Whisk the cream (450 ml) with the lemon zest until it just holds its shape. Roughly crush 3/4 of the mini meringues (2 packs), then fold these through the cream along with the fresh blackberries (1 punnet), saving a few to decorate the top.

Layer the fruity cream and meringue mix into glasses or bowls with the blackberry coulis. Finish with the remaining meringues, blackberries and a little extra lemon zest.
