Sift the flour (135 g), mixed spice (1 tsp), baking powder (1 tsp), salt (1/2 tsp) and sugar (2 tbsp) into a large bowl.

In a separate bowl or jug, lightly whisk together the milk (130 ml) and egg (1). Next add the melted butter (2 tbsp) and whisk again.

Pour the milk, egg and butter mix into the flour mixture. Beat until the batter is smooth.

Heat a non-stick frying pan over a medium heat and melt a knob of butter. Add a ladle of mix to the pan and cook.

Once bubbling, turn over and cook until both sides are golden. Repeat until you have used all the mix.

To make the glaze, mix together the M&S gingerbread flavour syrup (2 tbsp) and mixed spice (1 tsp).

For the apples, melt a knob of butter in a frying pan. Add the apples (8), season with salt and cook for a few minutes.
