Preheat oven to 200°C/180°C fan/gas mark 4.

In a bowl, mix your chicken breast pieces (4) with the olive oil (2 tbsp), lime juice (1/2), Caribbean curry powder (1 tbsp) and desiccated coconut (1 tbsp). Season with salt and pepper. Pop onto a lined baking tray, and roast in the oven for 15-20 minutes, or until cooked through. Alternatively, heat your air fryer to 180°C and cook the chicken for 15 minutes.

To make the salsa, in a bowl mix together the cubes of mango (1 tub), diced red onion (1/2), tomatoes (2), red chilli (1/2), juice of half a lime (1/2) and season with salt and pepper.

Warm your pittas (4) and carefully open them with a knife. Time to assemble. Spoon the aioli (4 tbsp) into the pittas, add the lettuce (to taste), cucumber (to taste), tomatoes (8), chicken and top with the mango salsa and crumbled feta (100 g).

Serve with M&S frozen sweet potato fries (1 pack), M&S fries or M&S spicy rice.
