Bring a large pan of salted water to the boil and cook the sprouts (500 g) for 5 minutes. Drain and run under a cold tap until cold.

Heat a large knob of butter (1 knob) in a frying pan and fry breadcrumbs (50 g) and garlic (1 clove) until golden and crispy. Remove and set aside.

Return the pan to the heat and fry bacon (4 rashers) and onion (1) until softened.

Add sprouts, and pan-fry for a further 5 minutes until tender and starting to caramelise.

Serve immediately, topped with the golden, garlicky breadcrumbs.
