Heat 2 tbsp olive oil in a large frying pan or paella pan over a medium heat. Add the onion (1) and cook until softened.

Add the garlic (3 cloves), smoked paprika (2 tsp) and tomatoes (5) and cook for 5 minutes. Add the bomba rice (250 g) and fish stock (750 ml), bring to the boil and reduce the heat. Simmer for 15 minutes, without stirring, until the rice is al dente and the stock is absorbed. If the pan dries out before the rice is cooked, just add a little water.

Stir in the seafood (1 pack) without disturbing the bottom of the pan. Cook for 7 minutes, until the prawns are pink and the rest of the seafood is cooked through. Serve the paella scattered with the chopped parsley (25 g), with the lemon wedges (1) alongside.
