Add the tomatoes (500 g) to a large bowl, season generously with sea salt (to taste), drizzle with the vinegar (1 tbsp), toss well and set aside for 15 minutes.

When the tomatoes have marinated, tear the stale bread (100 g) into smallish pieces.

Toss the olive oil (2 tbsp) through the tomatoes, add in the bread, torn basil leaves (10 g) and some freshly ground black pepper and mix well.

Serve on a platter topped with the burrata (1) a drizzle of olive oil, freshly ground black pepper and more torn basil.
