step 1
Preheat the oven to 200°C/180°C fan/gas mark 6.
step 2
Cook the sweet potato fries (400 g) according to the packet instructions.
step 3
Meanwhile, add the turkey thigh mince (500 g) to a bowl with 1 tbsp easy cooked onions (1 jar), and smoked paprika (1 tsp) if you wish, and season with salt and pepper. Use your hands to mash it together and then divide the mixture into 4 equal-sized balls. Form the balls into patties roughly the same size as the burger buns.
step 4
Heat a frying or griddle pan to a medium-high heat and drizzle each burger with a small amount of olive oil (as needed). Fry on each side for a couple of minutes until golden.
step 5
Then add the burgers to the baking tray with the sweet potato fries to finish cooking for around 8-10 minutes, until there is no pink meat remaining.
step 6
Lightly toast the burger buns (4) and then add a layer of Cook With M&S easy cooked onions, tomato slices (4) and lettuce (1/2). Place the burger on top and then add the avocado (1).
step 7
Plate up with the fries and the remaining lettuce and tomatoes for a healthy family dinner that feels like a treat.
