Preheat the oven to 180°C/200°C fan/gas mark 6. Drizzle a little olive oil into the corners of a large roasting tray, then add the orzo (300 g), frozen vegetables (1 bag) and 500ml of the stock (700 ml). Cook in the oven for around 30 minutes, stirring halfway through – and adding the remaining stock if it looks too dry – until the stock has absorbed and the orzo is tender.

Meanwhile, heat a frying pan over a medium heat and toast the pine nuts (50 g) until golden and fragrant.

Remove the tray from the oven and mix in the pesto (1 jar) and lemon juice (1). Season with salt and pepper to taste.

Divide between serving dishes and top each with a scattering of basil (1 bunch), a few toasted pine nuts, a good grinding of black pepper and a grating of grana padano (to taste) or plantbased cheese, if you like.
