Mix the onion (1/2), tomatoes (1 pack), basil (25 g) and olive oil (1 tbsp) in a bowl. Season with salt and pepper to taste.

Heat a griddle pan and toast each slice of bread (1 loaf) for up to 1 minute on each side until golden and marked. If you don’t have a griddle pan, lightly toast under a hot grill.

Top the sourdough with the tomato mix.

Use a spoon to pull apart the burrata (1) then spoon on top of the tomatoes.

Season with salt and pepper to serve.
