Slice the chicken breasts (4) horizontally through the middle to create evenly sized escalopes.

Season the chicken with salt and pepper and drizzle over a little olive oil (as needed).

In a griddle or frying pan, cook the chicken pieces for 4 minutes on each side, then remove from the pan and allow to rest.

Halve the burger buns (4) and toast them in the pan to soak up any extra chicken flavour.

Spoon the ketchup (4 tbsp) onto the base of each bun, then add lettuce (2) and a chicken breast. Top with spring onion (3) and a little more katsu ketchup, and sandwich the other half of the bun on top.
