step 1
Slice each of the chicken breasts (1 pack) into two across the middle. Wrap a strip of bacon (8 rashers) around each piece, as well as around each chicken thighs (1 pack), and secure each with a cocktail stick. Dust the wrapped chicken pieces in the seasoned seasoned flour (2 tbsp).
step 2
In a large casserole dish, heat 4 tbsp olive oil. Add the chicken and cook until browned all over, then remove from the pan and set aside. Add the garlic (1 clove), cinnamon (1) and cloves (2), then deglaze with the white wine (100 ml). Add the stock (1 L), return the chicken pieces and simmer until reduced by a third, about 20-30 minutes.
step 3
Add the grapes (300 g), cover and cook for 5 minutes. Using a slotted spoon, remove the chicken and grapes and set aside.
step 4
Add the bramble gin liqueur (100 ml) and reduce by half. Add the cream (120 ml) and tarragon (2 tbsp) and cook for a further 5-10 minutes.
step 5
Cook the shallots (12) in a pan of boiling water for 10 minutes, then drain. Heat the butter (30 g) and 1 tbsp olive oil in a frying pan and brown the shallots all over. Add mushrooms (8 handfuls) for the last few minutes, frying until browned.
step 6
Steam the French beans (300 g) until tender.
step 7
Remove the cocktail sticks from the chicken and return to the sauce with the grapes. Divide the chicken and sauce between serving bowls and serve topped with the shallot and mushroom mix and the parsley (2 tbsp), alongside the French beans.
