Preheat the oven to 180°C/160°C fan. Line a large baking sheet with parchment.

In a bowl, mix the wings (1 kg) with ¾ of the buffalo sauce (1 bottle) until evenly coated. Arrange the wings skin-side-up on the baking sheet in a single layer, then sprinkle with a little salt. Place onto a high shelf in the oven and cook for 30-35 minutes.

Meanwhile, cook the sweetcorn in a pan of boiling salted water for 8-10 minutes, or until tender, then drain. Mix the chipotle chilli paste (2 tsp) with the mayonnaise (80 ml) and spread the mixture over each cobettes (8). Divide between serving dishes and sprinkle with the coriander (2 tbsp).

Remove the wings from the oven and brush over the remaining buffalo sauce, then serve with the corn.
