Heat 1 tbsp olive oil in a saucepan. Add the onion (1) and cook for 3-4 minutes, until soft, before adding the pepper (1) and cooking for 3 more minutes. Add the garlic (2 cloves) and stir for a further minute.

Pour in the chopped tomatoes (1 tin), tomato juice (200 ml) and beans (1 tin) and stir in the chipotle paste (1 tsp). Bring to the boil, then simmer for 10 minutes. Stir occasionally.

Sprinkle over small chunks of the goat’s cheese (100 g) and leave to simmer for a further 5 minutes.

Toast the hot cross buns (4). Serve everything together on the table, using the hot cross buns as a scoop for the beans.
