Heat 1 tbsp of olive oil in a large frying pan or saucepan over a medium-low heat. Add the beef mince (1 pack) to the pan and break up with a spoon. Season to taste with salt and pepper and leave to cook for 8-10 minutes, stirring occasionally, until golden brown. Remove the beef mince and transfer to a bowl.

Add the mushrooms (100 g) to a food processor and blitz until finely chopped.

Tip the onion (1), carrot (2), celery (2), pepper (1) and mushrooms to the pan with a pinch of salt and cook over moderate heat for 7-8 minutes, until soft.

Add the beef mince back to the pan along with flour (1 tbsp). Tip in the Italian seasoning (1 tbsp), tomato paste (2 tbsp) and stock pot (1), followed by the chopped tomatoes (1 tin). Season to taste with salt and pepper.

Top up with 300ml of water and simmer for 20-25 minutes, stirring occasionally, until the mixture has thickened and reduced.

Meanwhile, bring a large saucepan filled with lightly salted hot water to a boil. Once boiling, add the spaghetti (350 g) and cook for 9-11 minutes, until al dente, then drain.

Add the cooked spaghetti to the bolognese and stir together. Top with some grated cheddar (40 g) (optional) and the basil leaves (10 g).
