Preheat the oven to 200°C/180°C fan/gas mark 6.

Heat a splash of oil in a large casserole dish over a medium heat and add the mince (1 pack). Cook for 5-7 minutes, stirring occasionally, until browned all over. Remove from the pan and set aside in a bowl.

Heat another splash of oil in the same pan and add the onion (1), carrot (2) and celery (2) with a pinch of salt. Cook, stirring occasionally, for 10 minutes, or until soft.

Stir in the cottage pie cooking paste (1 pack) and cook for a further minute. Stir in the chopped tomatoes (1 tin), green lentils (1 tin) with their water, and grated courgette (1). Fill the tomato tin with water and add this too. Return the mince to the pan. Simmer over a medium heat for 15-20 minutes, until reduced slightly. Season to taste with salt and pepper.

While the sauce is blipping away, make the mash. Bring a large pan of salted water to the boil. Add the potatoes (850 g) and cook for 15 minutes, until almost cooked, then stir in the cauliflower (400 g) and cook for a further 6 minutes. Drain and return to the pan.

Mash with a potato masher and season to taste with salt and pepper. Stir through the soft cheese (15 g).

Add the beef and lentil mix to a large baking dish and allow to cool slightly. Cover with the cauliflower and potato mash, then drizzle with olive oil. Bake for 30-40 minutes, until golden brown.
