Preheat the oven to 200°C/180°C fan/gas mark 6. Add the smoked salt (1/2 tsp) to the creamy mushrooms (1 pack) and mix well.

Unroll the puff pastry (1 pack), leave it on the greaseproof paper and transfer to a large baking tray. Cut into 6 squares.

In a diagonal line, top each square with 1 heaped tbsp of the mushrooms and a scattering of picked thyme (2 sprigs). Top with ¾ of the grated gruyère (75 g).

Loosely fold the opposite corners of the pastry over the filling, with one corner slightly overlapping the other. Gently press together to seal. Brush with the beaten egg (1) and scatter over the remaining gruyère.

Pop into the oven and bake for 15 minutes, until golden brown. Once baked, transfer to a wire rack to cool for at least 10 minutes before serving.
