Preheat the oven to 220°C/200°C fan/gas mark 7. Add the peppers (1 bag) to a large baking dish, drizzle with 2 tbsp olive oil and season with a generous pinch of salt. Cover tightly with foil and pop into the oven for 25-30 minutes until soft. Remove from the oven and leave to sit under the foil to cool.

Meanwhile, heat a large (30cm) frying pan over a medium-high heat. Pat the chicken legs (1 pack) dry with kitchen paper and season with salt and pepper. Add a glug of olive oil to the pan, followed by the chicken legs (skin-side down). Cook undisturbed for 7 minutes until golden brown.

Flip the chicken and cook for another 7 minutes. Transfer to a baking tray and place in the oven for a further 25 minutes, or until cooked through.

Return the frying pan to the heat with a glug of olive oil and the red onions (2). Add a pinch of salt and sauté for 5 minutes, until soft. Add in the tapenade (2 tbsp), Italian seasoning (1 tbsp) and butter (1 tbsp) until fragrant, then stir in the tin of cherry tomatoes (1 tin).

Meanwhile, peel the skins from the peppers (they should slip off easily). Thinly slice and add to the pan of tomatoes and simmer for 10 minutes, until thickened. Season to taste with salt and pepper.

When you’re ready to serve, stir the red wine vinegar (2 tbsp) through the sauce. Spoon the sauce onto a serving plate and top with the chicken legs. Serve alongside a generous portion of salad (1 pack), drizzled with balsamic glaze (to taste), and lightly toasted ciabatta (1 pack), if you’d like.
step 6 When you’re ready to serve, stir the red wine vinegar (2 tbsp) through the sauce. Spoon the sauce onto a serving plate and top with the chicken legs. Serve alongside a generous portion of salad (1 pack), drizzled with balsamic glaze (to taste), and lightly toasted ciabatta (1 pack), if you’d like.
