Heat a large pan of salted boiling water.

Add the butter (50 g) to a separate pan and allow to melt, then stir in the chilli paste (1 tsp) and the zest of the lemon (1).

Add the agnolotti (1 pack) to the boiling water and cook for 2 minutes, then add the samphire (1 pack) and cook for a further minute.

Use a spider sieve to transfer the pasta and samphire to the butter. Add a squeeze of lemon juice, then toss together to coat the pasta in the sauce. Serve straight away.
