Remove the burrata (150 g) from the fridge and allow it to come up to room temperature.

Preheat the oven to 240°C/220°C fan/gas mark 9. Pop the pizza base (1) onto a wire rack. Spread over the crème frâiche (4 tbsp) and sprinkle with a pinch of salt and pepper. Bake for 12 minutes, until golden and crisp.

Top the warm pizza with the mortadella (2 slices) and burrata, followed by a scattering of pistachios (25 g) and basil (25 g). Drizzle over the peach and jalapeño relish (1 tbsp) before slicing.
