Preheat oven to 220°C/200°C fan/gas mark 7. Coat the chips (250 g) and Cajun seasoning (2 tsp) and a little olive oil. Cook in the oven for 30 minutes, turning halfway through.

Meanwhile, melt the butter (1/2 tbsp) in a small frying over a medium heat. Add the sliced onions (1/2) and sprinkle with sugar (1 tsp). Cook for 6-8 minutes, stirring occasionally, until soft and sticky.

Add the balsamic vinegar (1/2 tbsp) to the onions, stir well, and cook for another 2 minutes. Remove from the heat and set aside until ready to serve.

When the chips have 15 minutes left, heat 1 tsp of oil in a frying pan over medium-high heat. Add the burgers (1 pack) and cook for 13-15 minutes, turning halfway through. Top with the cheese melts (2 slices), and cover with a lid to melt the cheese.

Meanwhile, wipe out the pan used for the caramelised onions and add the butter (1 tsp). Pop in the brioche buns (1 pack), cut side down for 1-2 minutes until golden brown.

Pop the cheese-covered burgers onto the toasted bun and top with the caramelised onions, a dollop of relish (to taste) and some little gem lettuce (as needed).

Serve immediately with the Cajun-spiced chips on the side.
