Preheat the oven to 180°C/160°C fan/gas 4 and line a 20cm x 20cm baking tin with greaseproof paper.

Melt the butter (115 g) in a saucepan or the microwave. Leave to cool slightly, then beat in the brown sugar (200 g) with a wooden spoon. Add the egg (1), vanilla extract (1 tbsp) and Marmite (1 tbsp) and mix well. Sieve in the flour (130 g), baking powder (1/2 tsp) and bicarbonate of soda (1/4 tsp) and gently fold together.

Finally, fold in the chocolate (80 g). Transfer to the baking tin and spread it out into an even layer – it’ll be quite thin. Bake for 20-25 minutes, until set and golden brown. Leave to cool, before cutting into squares and digging in.
