Preheat the oven to 220°C/200°C fan/gas mark 7. Break the cauliflower (1) into bitesize florets and arrange on a large baking sheet. Drizzle with olive oil, season with salt and pepper then roast for 15-20 minutes, until starting to char.

Meanwhile, add the cabbage (1/2), apple (1) and celery (2) to a large bowl with ½ tsp salt and the lemon juice (1). Scrunch with your fingers to combine. Stir in the blue cheese ranch dressing (6 tbsp).

After it’s had 15-20 minutes, remove the cauliflower from the oven and drizzle over the barbecue sauce (3 tbsp). Return to the oven for a further 5 minutes.

Heat the tacos (1 pack) for 30 seconds on each side in a dry frying pan over a medium heat, according to the pack instructions.

Serve the tacos with the slaw, sticky barbecue cauliflower and the buffalo sauce (to taste).
