Heat a splash of oil in a large frying pan or wok over a high heat. Add the prawns (1 pack) and stir-fry for 2-3 minutes, until pink. Remove from the pan and transfer to a plate.

Heat the rice (2 packs) according to the pack instructions in the microwave.

Add a splash of oil to the same pan and add the lemongrass (2 stalks), chilli (1), garlic (3 cloves) and ginger (1 tsp). Stir-fry for 30 seconds until fragrant. Add the green beans (200 g) and peppers (2) and stir-fry for a further 2-3 minutes before adding the prawns back in, followed by the nuoc cham (8 tbsp). Cook, stirring, for a further minute until heated through.

Serve the prawns with the fluffy rice.
