Preheat the oven to 220°C/200°C fan/gas mark 7. Cut the cauliflower (1 head) into florets and arrange on a baking tray, reserving the tender inner leaves, then season with salt and pepper. Roast for 20 minutes, until the cauliflower is tender and starting to char around the edges.

Stir in the sweet and sour sauce (2 jars) and sprinkle with the sesame seeds (1 tbsp) and top with the reserved cauliflower leaves. Drizzle the leaves in a splash of oil then return to the oven for a further 5 minutes.

Meanwhile, heat the egg fried rice (2 packs) according to the pack instructions.

Serve the cauliflower with the rice and some spring onions (1 bunch) on top.
