Heat a splash of oil in a large frying pan and add the bacon (6) and mince (1.5 kg), frying in batches until browned. Add to the slow cooker.

Add the soffritto mix (500 g), garlic (8 cloves), mushrooms (500 g), tinned tomatoes (1.6 kg), tomato paste (1 jar), sugar (1 tbsp), bay leaves (2) and the red wine sauce portions (2 pieces) to the slow cooker and cook on low for 6 hours. Turn the heat to high and cook for a further hour until thick. Season to taste.

Serve half with pasta (as needed) and parmesan (as needed) grated on top and freeze the rest to use another day.
